Spirulina Macaroons

Ahhh the time of year when everyone is a little bit Irish…

While trying to think of how to infuse some St Patrick’s Day spirit into our lives (while keeping it healthy) we racked our brains. Then it came to us… or Rob actually, like a whisper … spirulina

The sheer vibrancy of the green pigment in spirulina can’t be beat.

Now Rob and I have had an ongoing challenge/bet to see who can make spirulina taste good. Now for those of you who may not know what spirulina tastes like…I am not really sure how to put it into words that will justify the intensity of the flavor or smell… it is… singularly unique one might say, but very good for you. Anyway I digress, we have had our failures… recipes I wouldn’t try to pawn off on my worst enemy… in fact I had one such disaster recently… and unfortunately Rob’s parents were the victims.

We were heading off to visit Rob’s family and I was feeling a little off, so I went a ‘little’ heavy on the spirulina in the smoothies (well truthfully A LOT heavy… seriously… spoonful’s of it. It was horrible! lol) I had Thomas’ smoothies marked so I knew which ones to give him on the drive, and Rob focuses on nutrition so he was good with the added dose.  So off we set on our lovely Sunday drive… and after a great afternoon spent catching up with family we packed everything up … or so I thought (insert ominous music here) and headed home. The next day Rob received a call from his parents asking about our drive, how we were, and then the question came… what had we put in the smoothie we had left behind in the fridge. My stomach did a flip-flop… oh no! I didn’t! I couldn’t have!

… I looked up at Rob’s face and he looked back at me…

Did I leave one of the spirulina smoothies there or one of T’s???  Oh please let it be one of T’s I prayed!!!! Nervously I asked the question that would tell me how bad the situation was… with a sigh I asked… “Did it have a green sticker on the top?”DSC_0604

While I waited for the answer questions whirled through my head… Would my future in-laws think that I am the worst cook ever??? Would they wonder what exactly it is I am feeding their son??? Would I ever be able to be to make anything for them again??? Or maybe, just maybe it had a green sticker and it was one of Thomas’ smoothies (insert happy music and sunlight) and it was so good and they just wanted the recipe… yes that is likely it! They want the recipe! (Huge smile)

Then the answer I was dreading came back to me…”No”.

My heart stops beating for a moment. “I am so sorry,” I whisper.

Yes, it was one of the spirulina smoothies we had left behind. Luckily Rob’s parents are two of the kindest people in the world, so I may never truly know what they truly thought of that smoothie… oh don’t get me wrong, I know it tasted like spirulina… and I am pretty sure I will not be asked to host Christmas any time soon.lol

Now that incident aside I did have a winner last year with a spirulina pie that I managed to surprise Rob with when I first took on this challenge and that recipe has been unmatched ever since… until now. (Insert sly grin here… no seriously, a bigger grin then that…really, really big). For these macaroons I used similar spices, as I knew they were a hit with Rob before, and voila… they are disappearing before my eyes.

Spirulina Macaroons
 
:
Ingredients
  • 3 cups unsweetened coconut flakes
  • 1 tbs cinnamon
  • ¼ tsp sea salt
  • ½ cup maple syrup
  • ¼ cup coconut butter, softened
  • 1 tbs spirulina
Instructions
  1. In a food processor, process the ingredients until combined.
  2. Drop in 1 Tablespoon mounds on screened dehydrator screens.
  3. Dehydrate for 4-6 hours at 110, or until firm on the outside.
