Pear and Maple Crisp

DSC_0810Ahh the signs of fall are in the air. The crisp early morning weather that greets you as you take out the dog, the autumn leaves just starting to change colour… (happy sigh.)

While I do enjoy the summer, fall is almost here and I have to admit part of me is looking forward to it. I love the autumn leaves, squash, apple season, and most of all Halloween (huge grin.)

DSC_0859We are lucky enough to have a very kind neighbor who shared with us some of the most delicious pears of the season. Baskets of fresh luscious pears were just steps away from our door!!!

While munching on yet another pear I decided… a pear cobbler…it simply begged to be made. A delicate dusting of cinnamon with a light coating of liquid heaven (maple syrup) what better way to complement one of natures most exquisite fruits on a cool late summer day? As the cobbler bubbled in the oven our mouths were watering. The wafting aroma of cinnamon, maple, and pears even brought the dog out of her slumber to see what was going on.

Finally when I opened the oven door and brought out the bubbling bounty of purely delectable pear nirvana… ahhh perfection!

Pear Cobbler
The wafting aroma of the cinnamon, maple, and pears will make your mouth water on a cool, late summer evening.
  • 1 cup old fashioned oats
  • ½ cup of almond flour
  • 3 tbsp ground flax seed
  • 2 tbsp of whole flax seed
  • ⅓ cup coconut oil
  • ¼ cup maple sugar
  • 1 tsp cinnamon plus 1½ tsp cinnamon for topping)
  • pinch of sea salt
  • 6 cups organic pears, skins on and sliced
  • 3 tbsp maple syrup
  • 1½ tbsp vanilla extract
  • 1 tbsp corn starch or arrowroot flour
  1. Preheat oven to 375
  2. Mix the pears, maple syrup, vanilla extract, cornstarch, 1½ tsp cinnamon and pinch of sea salt in a bowl.
  3. Spread mixture evenly into a 8x8 cake pan.
  4. Melt coconut oil and mix remaining ingredients in a bowl.
  5. Spread mixture evenly over pears.
  6. Bake in oven (uncovered) for 35 minutes or until the pears are bubbling and the top is nicely browned.
  7. Remove from oven and serve.
