Pineapple Heaven

What an amazing day… on July 20th I married my life partner, love of my life, and soul mate.  We were truly blessed to have perfect weather for our wedding; the heat wave broke the day before with a rain shower during the rehearsal.

Rob, the Kale Monster, and I would like to send out a huge thank-you to all of our friends and family who helped make this day special, we could not have done it without you!!!

And what more could anyone ask for??? A popcorn bar for the kids, a beautiful park where they could run and play soccer as well as a wide variety of lawn games while we sipped on sparkling juice and our taste buds were tantalized with a variety of scrumptious hors’dourves (e.g. falafels, springs rolls, and gazpacho).

After the ceremony and enjoying our time at the Arboretum we went on to play a round of mini golf. Then it was back to the house for a social time and a lovely garden buffet as we listened to music, danced under the lit trees, and watched the children chase poor Tulley (our West Highland Terrier) and play out on the lawn.The evening was capped off with a stroll down to the Bay and each family lit a wishing lantern and sent them high into the starlit sky.

All through the day I enjoyed sipping on green drinks to keep me feeling refreshed as well hydrated. I always feel great whenever I have green juices or smoothies… all three of us do. I was impressed also by my God daughters when I noticed them happily sipping away on their green drinks as well. Nice going girls!!!

This particular juice recipe I would like to dedicate to the love of my life…

Pineapple Heaven

This is a tasty post workout juice. A great way to recharge and get much needed nutrients into the body quickly.

Ingredients

• ¾ of a ripe pineapple
• 4 cups mixed greens (kale, swiss chard, whatever you would like)
• 1 large cucumber
• 1 apple

Instructions

1. Cut fruits and vegetables accordingly and then juice. Best served on ice. Alternatively if you do not have a juicer you can add a cup of water and blend the ingredients together and pour/strain through a nut milk bag or cheese cloth.
