Pear Cobbler
 
 
The wafting aroma of the cinnamon, maple, and pears will make your mouth water on a cool, late summer evening.
:
Ingredients
  • 1 cup old fashioned oats
  • ½ cup of almond flour
  • 3 tbsp ground flax seed
  • 2 tbsp of whole flax seed
  • ⅓ cup coconut oil
  • ¼ cup maple sugar
  • 1 tsp cinnamon plus 1½ tsp cinnamon for topping)
  • pinch of sea salt
  • 6 cups organic pears, skins on and sliced
  • 3 tbsp maple syrup
  • 1½ tbsp vanilla extract
  • 1 tbsp corn starch or arrowroot flour
Instructions
  1. Preheat oven to 375
  2. Mix the pears, maple syrup, vanilla extract, cornstarch, 1½ tsp cinnamon and pinch of sea salt in a bowl.
  3. Spread mixture evenly into a 8x8 cake pan.
  4. Melt coconut oil and mix remaining ingredients in a bowl.
  5. Spread mixture evenly over pears.
  6. Bake in oven (uncovered) for 35 minutes or until the pears are bubbling and the top is nicely browned.
  7. Remove from oven and serve.
