Pear Cobbler

- 1 cup old fashioned oats
- ½ cup of almond flour
- 3 tbsp ground flax seed
- 2 tbsp of whole flax seed
- ⅓ cup coconut oil
- ¼ cup maple sugar
- 1 tsp cinnamon plus 1½ tsp cinnamon for topping)
- pinch of sea salt
- 6 cups organic pears, skins on and sliced
- 3 tbsp maple syrup
- 1½ tbsp vanilla extract
- 1 tbsp corn starch or arrowroot flour
- Preheat oven to 375
- Mix the pears, maple syrup, vanilla extract, cornstarch, 1½ tsp cinnamon and pinch of sea salt in a bowl.
- Spread mixture evenly into a 8x8 cake pan.
- Melt coconut oil and mix remaining ingredients in a bowl.
- Spread mixture evenly over pears.
- Bake in oven (uncovered) for 35 minutes or until the pears are bubbling and the top is nicely browned.
- Remove from oven and serve.
