I like my falafels flatter (more like a small patty) so I get more of the yummy crispy bits. Once they are formed you can cook them one of 2 ways. Makes 12 medium sized falafels or 6 burgers.

Ingredients
1 ½ cups cooked quinoa
1 cup hummus
½ cup chopped fresh cilantro
¼ cup diced sun dried tomatoes
2 cloves of garlic
1 Tbs ground flax
½ Tbs ground coriander
½ Tbs ground cumin
½ Tbs curry
½ tsp turmeric
¼ tsp salt
Instructions
Combine the above ingredients and form into balls or patties.
Bake at 375 for 10 minutes and flip. Cook for an additional 10 minutes. OR Warm skillet and olive oil to a little above medium heat. Once warm add falafels, making sure they do not touch. Cook for 10 minutes and flip to other side.
