The Kale Monster’s Fruit and Kale Smoothie

DSC_0972Thomas has been pretty excited about this one.. his first recipe being posted onto the blog (Insert proud Mom smile here). The Kale Monster is a pretty big smoothie fan – great for a kid on the go… or anyone for that matter. lol

Yesterday we were heading out for a run up the mountain and needed a little pick me up before hand to tie us over until dinner. This worked out perfectly as Thomas quickly washed  and threw the luscious pears, perfectly ripened strawberries, deliciously mouth watering apples, and fresh green kale into the Vita-mix and we were out the door sipping our smoothies before our dog could say welcome home.

DSC_0957With the warm weather spell we have been getting lately this really hit the spot… and I’ll admit it is pretty sweet to have Thomas in the kitchen as well. Smoothies are a great nutrient dense snack that travels well in a thermos too – whether it is to a soccer tournament or on a Sunday drive. Cooking is a life skill that I am happy he is learning and enjoying. What we find works best for this recipe for kids is a 60-40 mix, 60% fruit to 40% veggies (if it is just for Rob and I we often use 20% fruit to 80% veggies – more of a traditional green smoothie).

DSC_0960I know I am biased, but Thomas is an awesome smoothie maker! The combination of the fruits with the kale was just what we needed to jump start our taste buds and we took the rest with us on our trek in a thermos for a great plant based recovery shake… so yummy!!!

Below is Thomas’ basic recipe, which is great on its own; from there we typically add an assortment of 3-4 super foods (I have listed some of our regulars below that would go well for you).

Fruit and Kale Smoothie
 
To take this smoothie to the next level you can add a few super foods to the mix such as Marine Phytoplankton, Chaga, Reishi, flax seed, chia seeds, goji berries, or acai berries to name a few. Have fun and enjoy!

Ingredients
  • 2 bananas
  • 1 apple (core removed)
  • 1 pear (core removed)
  • 2 scoops vanilla protein powder (we use a raw vegan blend)
  • 3 cups water
  • 8 ice cubes
  • 4-5 leaves of kale (depending on size)
  • 6-8 strawberries
Instructions
  1. wash all of your fruit and veggies.
  2. If needed, roughly cut them up to fit into the Vita-mix (blender).
  3. Add the water and ice.
  4. Blend until smooth.
  5. Enjoy!
